This coffee represents years worth of development by the National Federation of Coffee Farmers in Colombia - One of the better portrayals of a variety that was introduced by the Federation to combat common crop issues like coffee rust that forces farmers to lose large amounts of their production.
Following careful picking, Henry and his team then expose the cherries to a 30 Hour underwater fermentation in a bid to enhance the coffees flavour profile.
